Chef notes
I’m with Al Roker and don’t love artificial pumpkin spice anything. But I’m a huge fan of true pumpkin flavor and warm seasonings. Canned pumpkin is so good for you, and I make this dip as a snack or even serve it to the boys for lunch. It’s great as a dip for apples or graham crackers or even as a healthy spread on waffles or pancakes.
Ingredients
- 1 apple, sliced
- 2 cups water
- 2 tablespoons salt
- 1 cup plain Greek yogurt
- 1/4 cup canned pumpkin
- 1 teaspoon vanilla
- 1/2 teaspoon pumpkin pie spice
- 2 tablespoons maple syrup
Preparation
Add salt to water. Place sliced apples into salt water and let sit for 10 minutes, then rinse.
Mix apples with all the other ingredients, then serve as a dip with graham crackers or apples, or as a spread on pancakes or waffles.
